    The cake/bun is also the name of a character in a musical work. They also sell them in Sainsburys!

      I was thinking Madeleine - which is a cake or bun and also the name of [DELETE: the Marschallin in Rosenkavalier] the Countess in R Strauss's Capriccio.

      There is a Col de la Madeleine in the Alps, which is one of the stages in the Tour de France bike race

      The Spanish connection eludes me.... the wives of Milhaud and Duruflé were both called Madeleine but they were French...

            True, Madeira was my first thought... But I could only make that fit one part of the question Madeleine answered two.

                  Getting a wifi signal has been a problem. Superb concert in Tetbury, I may never hear Bach cantatas played and sung so well again.

                  I think all your cakes so far are not on target. Maybe more like sticky bun things, bit long and thinnish.

                  Re the Alps, think about crossing them.
